Taiwanese Style Fried Vermicelli 台式炒米粉

Ingredient :
Vermicelli 300g
Dried shrimp 30g
5 mushroom
Shredded pork 100g
Carrot 20g
cabbage 250g
coriander
3 shallots
1 1⁄2 bowl water

Seasoning :
2 tbsp soy sauce
1 tsp pepper
1 tsp sugar
Rice wine
1 tsp salt
Chicken powder (to taste)

Method :
1. Boil a pot of water, add in vermicelli and a dash of cooking oil, cook until soften. Drain and set aside.
2. Add oil, shallots, dried shrimps and shredded pork into Buffalo Pro Chef Plus, select the “Stir Fry” function, adjust timing to 20 minutes, cover the lid, tilt the pot to the right and start cooking.
3. Stir-fried until pork cooked, add soy sauce and rice wine, stir-fry until fragrant. Removed and set aside.
4. Cut vermicelli to desire length. Add all seasoning into the pot, cover the lid, and tilt the pot to boil.
5. Add vermicelli into the pot, stir fry evenly, add in cabbage, stir fry until seasoning mixture soaked up.season with salt and chicken powder. Serve with coriander.


材料:

米粉300g

虾米30g

香菇5

肉丝100g

胡萝菠20g

高丽菜250g

芹菜末少许

红葱头3

清水1 ½

 

调味料 :

酱油2大匙

胡椒粉1小匙

1小匙

米酒适量

1小匙

鸡粉适量

 

做法:

1.先将米粉用滚水川烫过,再加一点油,避免米粉沾黏,将米粉捞起备用,用盖子盖起保存。

2.将1大匙油、红葱头、虾米、肉丝放入内锅,选择“Stir Fry”功能,时间调至20分钟,盖锅盖,倾斜锅子至右边,开始翻炒。

3.肉丝翻炒到泛白变色,再加入酱油、酒,拌炒到香味出来即可盛起。

4.用剪刀稍稍将米粉剪成适当的长度;将酱油、胡椒粉、糖、米酒还有1 ½ 碗的水加入锅中,盖锅盖,倾斜锅子翻炒。

5.等调味料煮滚之后再将米粉放入锅中,继续翻炒,再加入高丽菜,盖上锅盖,翻炒至米粉完全吸收汤汁。

6.先前炒好的配料放入锅中与米粉拌匀,再添加一些盐与鸡粉调味米粉,最后再加入芹菜末,拌匀即可起锅。
