100gm black bean (lightly toast on pan and remove skin)
1 bulb garlic (peel each cloves)
750ml sweet vinegar
325ml black vinegar
5 hard boiled egg
80gm palm sugar
4 tbsp sesame oil
1 tsp salt
900ml water
Method
Pre-preparation a day before. Heat pot and place old ginger and stir fry. Add sesame oil and garlic and stir fry until fragrant. Add water and cook until boiling. Turn to low heat, keep boiling for 2 hours. Add palm sugar, black bean, sweet vinegar, black vinegar and simmer for another 2 hours. Turn off the heat and add in hard boil eggs. Keep aside for 1 day. .
The next day, prepare a pot of water. Place pig trotter into pot and cook briefly. Remove from water and set aside
Add the stock prep the day before into inner pot. Select “Steam” function and adjust timing to 1 hour. Close the lid and let it boil
Once boiling, put in the pig trotter and continue cooking until time ends.
