Prepare a pot of boiling water. Place pork ribs into pot and cook briefly. Remove from water and set aside.
Use blender to blend all Ingredients B into a paste.
Use ⅓ of paste to marinate pork ribs.
Add oil into inner pot and select “Steam” function. Adjust timing to 1hour.
Add curry paste into pot and stir fry until fragrant. Add in marinated pork ribs and stir fry for 1 minute. Add chicken broth, potatoes and carrots and mix well. Close lid.
5 minutes before complete, add onions, coconut milk and let it cook for 3 minutes.
Add salt and sugar to taste. Serve with white rice.
