Nyonya Curry Pork Ribs

  • 500gm pork ribs (cut into small pieces)
  • 150gm potato (cut into small cubes)
  • 50gm carrot (cut into small cubes)
  • ½ purple onion (slice)
  • 3 tbsp coconut milk
  • 3 tbsp soybean oil
  • 500ml chicken broth
  • 3 red chili
  • 100gm shallots
  • 30gm minced garlic
  • 2 stalks lemongrass
  • 7 pieces dried chili (soaked in water)
  • 5 candlenuts
  • 2 tsp belacan
  • 1 tbsp curry powder
  • 1 tbsp chili powder
  • 2 tsp tumeric powder
  • 2 tsp coriander powder
  • 1 tsp five spice powder
  • 2 pandan leaves
  • 300ml water
  • 200ml coconut oil

Method

  1. Prepare a pot of boiling water. Place pork ribs into pot and cook briefly. Remove from water and set aside.
  2. Use blender to blend all Ingredients B into a paste.
  3. Use ⅓ of paste to marinate pork ribs.
  4. Add oil into inner pot and select “Steam” function. Adjust timing to 1hour.
  5. Add curry paste into pot and stir fry until fragrant. Add in marinated pork ribs and stir fry for 1 minute. Add chicken broth, potatoes and carrots and mix well. Close lid.
  6. 5 minutes before complete, add onions, coconut milk and let it cook for 3 minutes.
  7. Add salt and sugar to taste. Serve with white rice.
