Soak plums in hot water for 30 minutes. Remove plums and set water aside. Chop plums into pieces and place plum seeds into a teabag.
Prepare a pot of boiling water. Place pig trotter into pot and cook briefly. Remove from water and set aside
Add oil & salt into inner pot and select “Claypot” function. Cook with preset timing.
Heat oil and add in ginger and spring onion; saute until fragrant.
Add Shao Hsing wine then add trotter and stir fry for 1½ minute.
Add star anise and black peppercorns and stir until fragrant.
Add water, chicken broth, water that is used to soak the plum, plums, soy sauce, dark soy sauce, brown sugar and rice vinegar. Stir well and close the lid to cook.
Cook until timing ends, and trotter is ready to serve.
