Heat oil in a pan, stir fry diced scallion and minced garlic until fregrant. Add in minced pork and saute, add salt, soy sauce and sugar, stir evenly; thicken sauce with corn starch, removed from pan and set aside.
Steam augergine until slightly soft. Slit it and grease oil at the opening, stuff sauted minced pork into the aubergine.
Place aubergine into Buffalo Pro Chef Plus, select “Barbecue” function and cook for 3 minutes, then add in minced pork, continue baking for 2 minutes; sprinkle with black pepper and serve.
