Chicken Pot with Chinese Rice Wine

  • 3 pieces chicken drumstick
  • 6 dried mushroom (soaked in water)
  • 1 king oyster mushroom
  • 1 red chili
  • 1 celery
  • 1 stalk spring onion
  • 4 cloves garlic (lightly pat to crush it)
  • 4 slices young ginger
  • 3 tbsp ‘Hua Diao’ wine
  • 1 tbsp black sesame oil
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp rock sugar
  • 50ml water
  • 2 tbsp ‘Hua Diao’ wine
  • 1 tbsp soy sauce
  • 1 tbsp dark caramel sauce
  • 1 tsp chicken powder
  • 1 tsp sugar

Method

  1. Sliced mushroom, king oyster mushroom and red chili, set aside.
  2. Cut celery and spring onion into sections and set aside.
  3. Cut drumstick into bite size pieces. Marinade chicken with seasoning ingredients for 30 minutes.
  4. Add sesame oil into inner pot. Select “Steam” function and cook with preset timing.
  5. Heat sesame oil, then add ginger and garlic. Saute until fragrant.
  6. Add in chicken pieces, king oyster mushroom, mushroom and all seasoning; stir well. Close lid and cook until complete.
  7.  When cooking completes, add in red chili, celery and spring onion. Stir well and ready to serve.
