- 1 aubergines
- 30g minced pork
- 3 mushrooms
- dice scallion
- minced garlic
- oil
- 1 tbsp soy sauce
- Salt (to taste)
- Caster sugar (to taste)
- Black pepper (to taste)
- 1/2 tsp corn starch
- 2 tbsp water
Method
- Heat oil in a pan, stir fry diced scallion and minced garlic until fregrant. Add in minced pork and saute, add salt, soy sauce and sugar, stir evenly; thicken sauce with corn starch, removed from pan and set aside.
- Steam augergine until slightly soft. Slit it and grease oil at the opening, stuff sauted minced pork into the aubergine.
- Place aubergine into Buffalo Pro Chef Plus, select “Barbecue” function and cook for 3 minutes, then add in minced pork, continue baking for 2 minutes; sprinkle with black pepper and serve.
